Reheating puff pastry pies without sogginess

Why does puff pastry go soggy?

Any reheating method that adds steam, the microwave especially, softens the layers further. Any method that heats only the top leaves the base damp. The fix is dry heat from below and around, at a moderate temperature, for long enough to heat the centre safely.
What is the best way to reheat a chilled pie?

The air fryer method: 160 C for 8 to 12 minutes, on a rack if you have one, foil loosely over the top for the first half if your machine browns aggressively. Air fryers are fast at re-crisping and inconsistent at heating centres, so check the temperature.

In Singapore, “room temperature” is warm. If pies are cooling on a counter, get them into the fridge as soon as they stop steaming.
How do I reheat from frozen?
Do not thaw on the counter. Either thaw overnight in the fridge and follow the chilled method, or bake from frozen: 170 C, loosely covered with foil, 25 to 35 minutes for a small single pie, then uncover for the last 5 minutes. - Microwave on medium for 45 to 60 seconds to take the chill off the centre.
- Move the pie straight to a hot oven, toaster oven or air fryer for 5 to 8 minutes to drive off moisture and re-crisp the layers.
- Check the centre is at 75 C.

How do I stop the base going soggy before it is even reheated?
Most of the work happens before the pie goes into the fridge.
- Cool the pie on a rack, not on a plate, so steam escapes from underneath.
- Do not wrap a warm pie. Wait until it is fully cool, then cover it loosely or put it in a container with the lid ajar for the first hour.
